I am not exegurating, they are the crème de la crème of cookies! I have been making them for a good while now and have perfected my recipe. As I like to bake and eat them so much, I decided to write down this fantastic S'mores cookies recipe and share it with you. I hope you'll find as much joy in it as I do. S'mores may look like very advanced cookies, but they are really quite simple to make! The basic recipe I use reminds a lot of that used to make regular chocolate chip cookies, and most of us are familiar with that one, aren't we? Here are all the ingredients you need for this fantastic S'mores cookies recipe: All-purpose flour Baking powder Baking soda Corn starch Digestive biscuits Semi-sweet chocolate chips Crispy Carrie caramel sea salt chocolate bar (or other chocolate bar alternatives) Unsalted butter at room temperature Light brown sugar Egg Vanilla extract Salt Mini marshmallows As you can see, it's nothing fancy at all! Instead, the secret is how you top this type of cookie. And with what! Before we continue with the step-by-step baking guide, let's see what kind of baking equipment you need to make S'mores. What Equipment Do You Need to Make S'mores Cookies? All you need to make delicious S'mores cookies is the following (all of these items can be found on Amazon via the respective link): A bowl-lift stand mixer Cookie sheets Parchment paper Measuring cups Rubber scraper Kitchen scissors How Do You Bake S'mores Cookies Step By Step? Roughly chop the digestive biscuits and Crispy Carrie chocolate bar, and cut the mini marshmallows in half with scissors. Using a stand or hand mixer, beat the butter until creamy, then add the sugar and keep beating for about 2 minutes. Add in egg and vanilla until combined. Combine the flour, salt, baking powder, baking soda, and cornstarch in a bowl. Add your flour mixture to the butter mixture, beating on low speed until just combined. Add the rest of your marshmallows, chocolate chips, and digestive biscuits to the dough and mix on low until combined. (Save 1/4 of the cut marshmallows for later) Chill for about 1 hour. Make sure to keep them at room temperature during these four days. You can also put your S'mores cookies in the freezer, where they can be stored for up to three months. But don't kid yourself! Most likely, they will be eaten within a day or so. They are that delicious! Can You Freeze S'mores Cookie Dough? If you've made too much dough or want to bake your S'mores at a later point in time, you can freeze your cookie dough for up to three months. Helpful Baking Tips for S'mores Cookies Marshmallows If you don't have any mini marshmallows at home, you can use regular marshmallows and just cut them into little pieces. I prefer mini marshmallows, as they look nicer on top of the cookies, but that's really just a detail. Some people ask why I don't top the cookies with marshmallows and chocolate pieces right from the start. The thing is, if you bake your cookies with the toppings from the beginning, they will most likely start to melt and spread all over the place. Not only does this mess up your baking sheet, but it also makes the cookies look less tasteful. Adding the topping at the end cleverly avoids these issues and makes for fabulously looking S'mores! Chocolate Chips You can use either semi-sweet or bitter-sweet chocolate chips for this recipe. Or why not both? It's all up to your personal flavor preferences! Both alternatives can work well, so just experiment and see which of the two you like better. Sugar I usually bake with brown sugar, but you can replace it with granulated sugar or other alternatives. I find that brown sugar gives the cookies a nicer sweetness. But, once again, we all have different preferences when it comes to taste and flavor! Chocolate You'll see Hershey's bars used in many other recipes, and that's totally fine. I use Crispy Carry bars (among others) for their somewhat more extravagant flavor mixes. Their caramel sea salt chocolate bars is to die for and, to me, the perfect pick for my S'mores cookies. It's insane how good they are! Biscuits Many people use Graham crackers in their S'mores recipes, but I really prefer Digestive biscuits. They both give a nicer texture to my mix and are naturally sweeter than Graham crackers. This allows me to use less sugar in my recipe. Incredible S'mores Cookies Recipe Yield: 18-20 cookies Prep Time: 15 minutes Cook Time: 12 minutes Chill Time: 1 hour Total Time: 1 hour 27 minutes This is probably the best S'mores cookies recipe out there! These dreamlike cookies are filled with marshmallows, chocolate, and digestive biscuits, and yeah, they will blow your mind! Print Ingredients 1 ½ cups all-purpose flour ½ tsp baking powder ½ tsp baking soda 1 tsp cornstarch 1 cup semisweet chocolate chips 10 tbsp unsalted butter at room temperature ½ cup brown sugar 1 egg 1 tsp vanilla extract ¼ tsp salt 1 ½ cups mini marshmallows OR marshmallow bits divided 1 (1.4oz) bar Crispy Carrie Caramel Seasalt Chocolate (alternatively 1 (1.55oz) bar Hershey's Chocolate) 4 (2.1oz) digestive biscuits Instructions Roughly chop the digestive biscuits and Crispy Carrie bar, then cut the mini marshmallows in half with a pair of scissors. When heated up, marshmallows have a tendency to first expand and then melt.
